This savory SoChatti dish will be a great addition to any Thanksgiving turkey!
- 1 cup of turkey or chicken stock
- 1/2 cup red wine
- 2 tablespoons cup of pan drippings (turkey) or bacon grease
- 1/2 stick of butter
- 1/3 cup flour
- 1 small shallot (minced)
- Salt and Pepper
- 4 ounce of SoChatti chocolate
Step 1. In a large saucepan, combine the stock, wine and minced shallots and bring to a simmer. Cook over moderate heat, occasionally stirring, until reduced by half.
Step 2. Pour the stock through a strainer to remove the shallots. Strain the stock into a large bowl.
Step 3. Add the butter to a new saucepan and melt the butter over moderate heat. Add the flour and whisk frequently, until deep golden, 3 to 5 minutes. Whisk in the strained stock and the reserved turkey pan drippings and bring up to a simmer.
Step 4. Cook over medium-high heat, occasionally whisking, until the gravy is thickened, remove from the heat. Let the gravy cool for 10 minutes. Then whisk in the SoChatti and season with salt and pepper.
