Banana and Chocolate Bread

Next time you have some ripe bananas try this delicious Banana and Chocolate Bread!


INGREDIENTS

  • 1 cup of sugar
  • ½ cup unsalted butter
  • 1 ½ cups of flour
  • ½ teaspoon salt
  • ¾ teaspoon baking powder
  • 3 ripe bananas + 1 banana for topping
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 4 oz. SoChatti chocolate
  • 1/3 cup brown sugar

INSTRUCTIONS

Step 1. Pre-heat the oven to 350 degrees, then grease a 9 x 5 loaf pan and set to the side.

Step 2. Sift the flour, salt, and baking soda into a bowl and set to the side.

Step 3. Place the room temperature butter and sugar into a bowl of a stand mixer and cream them together till well combined.

Step 4. In a medium bowl mash, three of the bananas. Add the bananas, vanilla, and eggs to the butter mixture in the stand mixer bowl, then combine.

Step 5. Add the flour mixture to the stand mixer bowl and stir until just combined.

Step 6. Take one cup of the banana bread mixture and place it in a small bowl with the SoChatti chocolate. Stir to combine. Scoop the banana bread mixture and the chocolate banana bread mixture into the prepared pan alternating the mixtures. Using a butter knife swirl the two mixtures together.

Step 7. Slice the final banana into 3 or 4 long strips to place on top of the bread. Cover each slice of the banana with brown sugar on one side. Place the sugared bananas on top of the bread.

Step 8. Bake the bread for 55 to 65 minutes, or until done.  If the top starts to brown too much place foil gently over the bread to prevent burning.  After baking, remove the banana bread from pan after 10 minutes and place on a cooling rack to finish cooling. Place the bread in the fridge covered for up to 4 days.
